To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

Making the Syrup: Combine all the components into a saucepan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, take off the stove allowing it to cool entirely. Transfer into an sterilised bottle, cap it and store in the fridge, where it will keep for up to one month.

To make Batch Mix: Mix all the liquid ingredients into a sizeable container, leave to sit for an hour, then filter it preferably using a fine cloth, making it perfectly clear.

For serving: Pour 85ml of the cocktail base into your stirring glass packed with ice, gently stirring lightly for about 60 seconds until cold. Filter into an frosted cocktail glass or equivalent, top with a few cranberries and complete it using a light spray of the essential oil over the top.
